
Gluten-Free Blueberry Muffins – Recipe Review
I was looking for inspirational recipes for blueberry season, and found this – a fantastic gluten-free blueberry muffin recipe from America’s Test Kitchen “The How Can It Be Gluten Free Cookbook.”
“The How Can It Be Gluten Free Cookbook” has been a terrific resource as I explore gf baking. Though I’ve been an amateur baker for my entire adult life, gluten-free baking is a whole new realm for me. There’s wayyy more science involved, way more variation when it comes to the kinds of flours (especially with so many different rulesets for different dietary restrictions) – all in the pursuit of trying to recreate the same textures as normal baking without the same inputs.
I thought this was the best gluten-free blueberry muffin recipe – easy to use, good explanation of the science, and it produced AMAZING results. It’s the perfect gluten-free muffin – light, fluffy, and MUFFIN-y. Not gritty, dense, or greasy – which is a common issue with gluten-free muffins. These gf blueberry muffins are a great use of fresh, in-season blueberries. It’s a convenient breakfast-to-go, an afternoon snack with tea, or a quick snack to pack on a hike for easy energy. We packed these on our camping trip and they kept really well.

Bonus fun fact: the beautiful seaside watercolor painting I used as a prop was painted by my mom!! She’s taken up watercolor painting as a hobby and I’m so impressed by how beautiful her watercolors are. 😊 So happy I received one and wanted to show it off in my food photos 🥰
