Air Fryer Corn Cheese and Shrimp Egg Rolls with Cilantro Lime Crema

If you love corn cheese, you’ll love these air fried corn cheese and shrimp egg rolls! Don’t skip on the sauce: the cilantro lime crema is the perfect tangy and refreshing accompaniment to these cheesy egg rolls.

Corn Cheese Inspiration

I came up with this recipe to bring to my family’s Thanksgiving, where food is the main event. I wasn’t doing the turkey this year (for the first time in nearly 15 years!) so I wanted to impress with a fun and creative appetizer. In the weeks leading up to our family gathering, I was on the prowl for inspiration. I spent a lot of time looking at my favorite food blogs, scrolling through instagram, poking at different cooking subreddits, and NOTHING out there was singing to my muse.

So, I though ‘what’s a new take on something fun that my family loves?’ What came to mind was CORN CHEESE – a favorite at Korean barbeque. I toyed with the idea of making it into a dip, but then I thought ‘how can I wrap the carb around this cheesy goodness so it’s an easy finger food?’ Thus the corn cheese egg roll was born.

Pairing With a Dipping Sauce

Alone, these egg rolls are amazing, but they are fairly one-tone – and that tone is CHEESY. Pairing it with a zesty dipping sauce really makes the flavors sing and lightens up this decadent appetizer.

I love cilantro lime crema on most things – the creaminess of dairy and the freshness of cilantro and lime really awaken your taste buds. Taste these egg rolls without and then WITH the cilantro lime crema, and you will notice the synergistic difference.

How To Wrap Egg Rolls

Despite being an avid dumpling wrapper (and eater), I’d never once made egg rolls before (probably because they aren’t actually a Chinese food as far as I know). It’s very easy to pick up, though. I will point you to The Woks of Life for a great guide on how to wrap egg rolls.

Ingredients

Adjust Servings
2 (15 oz)cans corn
4tablespoons mayonnaise
½teaspoon sugar
2teaspoons red chili flakes
4 tablespoons butter, divided
1pound shrimp (raw, peeled, and deveined)
1teaspoon garlic oil (or 2 cloves garlic)
cups shredded mozzarella cheese
1package egg roll wrappers (approx 24)
olive oil
Cilantro Lime Crema
cups sour cream
4tablespoons mayonnaise
2 limes (zest and juice)
1teaspoon garlic oil (or 2 cloves garlic)
½bunch cilantro

Directions

1.

Prepare ingredients

Drain 2 cans of corn. Dice 1 pound shrimp.
Wash ½ bunch cilantro, zest only half of one of the limes, but juice both of the limes. Mince 4 cloves garlic if using.

Mix cilantro lime crema in food processor

Mix 1½ cups sour cream, 4 tablespoons mayonnaise, ½ of a lime's zest, juice of 2 limes, 1 tsp garlic oil (or 2 minced garlic cloves), and season with salt and pepper.
Blend in food processor or blender until smooth.

Mix corn with seasonings

In a mixing bowl, combine 2 cans drained corn, 4 tbsp mayonnaise, ½ tsp sugar, 2 tsp red chili flakes, and season with salt and pepper.

Cook shrimp

On a frying pan on medium-high heat, add 2 tablespoons butter and fry diced shrimp until just barely pink, 1-2 minutes each side will do it.
Add 1 tsp garlic oil (or 2 minced garlic cloves) near the end and mix. Season to taste. Remove from pan.

Cook corn and cheese

On a frying pan on medium heat, add 2 tablespoons butter and corn mixture. Cook for 2-3 minutes.
Add 1½ cups shredded mozzarella cheese and mix until melted. Remove from heat. Mix in cooked shrimp.

Wrap egg rolls

Get ready to wrap! Prepare your station with your shrimp-corn-cheese mix, egg roll wrappers, and a small bowl with a little water in it.
Spoon filling into wrapper (approx 2-3 tbsp depending on how big your wrappers are and how stuffed you want them to be). Dip your finger in the little bowl of water to moisten, and brush the sides of the wrapper with water (this is your glue!) and roll up.

Bake egg rolls

Brush all sides of egg rolls with olive oil and place in your air fryer basket. Air fry at 375°F for 6-8 minutes each side until they are crispy and golden brown.
