Best Beef Short Ribs Recipe in Instant Pot with Polenta (Low-FODMAP)

This dish is an impressive Sunday night or date dinner, yet so simple to make! Plus beef short ribs are rich and hearty – the ultimate wintery comfort food.

The restaurant version most definitely uses onions and/or garlic, but this version isn’t lacking for flavor without it.

There’s also so many options for sides – feel free to serve it with mashed potatoes, polenta, or pasta.

  • Instant Pot or pressure cooker (if you don’t have a pressure cooker, you can simmer in a dutch oven/stock pot for 3-4 hours instead)

Ingredients

5pounds short ribs
2 carrots
1tablespoon tomato paste
2 bay leaves
3sprigs fresh thyme (or 1 ½ teaspoon dried thyme)
cup red wine
1tablespoon soy sauce
1 teaspoon fish sauce
1teaspoon brown sugar
1cup beef stock
1teaspoon garlic oil
2tablespoon cornstarch
¼cup water

Julienne 2 carrots

Sear short ribs in batches

Sear 5 lbs short ribs in an Instant Pot or pressure cooker in several batches, using the sauté setting on high.

Soften carrots, and add tomato paste, bay leaves, and thyme

Remove short ribs, and sauté your julienned carrots.
After carrots have begun to soften, add 1 tb of tomato paste, 2 bay leaves, and 3 sprigs of thyme (or 1 ½ tsp dried thyme). Season with salt and pepper.

Deglaze with red wine and add soy sauce, fish sauce, broth, garlic oil, and sugar

Add ⅓ cup of red wine and cook on medium-high to scrape up fond (browned bits). Allow alcohol to cook off for 2-3 minutes.
Add 1 tb soy sauce, 1 tsp fish sauce, and 1 cup broth , 1 tsp garlic oil , and 1 tsp brown sugar.

Cook on high pressure for 45 minutes

While waiting, make slurry

While you wait, create a slurry with 2 tb cornstarch and ¼ cup water.

When done, remove short ribs and add slurry to sauce

Once release is complete, pull out your short ribs (keep them covered so they don't get cold) and on the saute setting, let the liquid boil and stir in your slurry.
Serve short ribs with your delicious gravy.
